Antioxidant Properties of Formulated Mixed Fruit Chips and Its Nutritional Quality

چکیده

Some common diseases such as diabetes, hypertension, cardiovascular diseases, and neurodegenerative diseases are most likely to develop in older people. These people become dependent on medicine. Regular intake of nutritious food can prevent such types of diseases. Since it is not possible to eat fruits every day, however, formulate nutritious mixed dry fruit chips that can be supplementary of vitamins, minerals, fibers, antioxidants and anti-inflammatory to these types of people. As an anti-decomposing dry chips, these five mixed fruits will be a food supplement of antioxidants and anti-inflammatory compounds on the human body. In this study, tropical common fruits available in Bangladesh were used to formulate a total of five mixed fruit chips products with different preservatives. These five formulated chips had a mixture of Banana, Mango Guava, Paste, Black Berry, Elephant Apple, Hog Plums, Goose Berry, Rabia/Sak -Sak, Aroma Rice, and Preservative with a definite ratio. One formulated dry chip was without preservatives for checking the shelf-life. Moisture, fiber, sugar (fructose, reducing sugar and total sugar), vitamins (-carotene and vitamin C), minerals (sodium, potassium, iron, calcium, and phosphorus) contents were also determined to the five chips. To check the antioxidant property, total polyphenols and flavonoids content as well as antioxidant activities in terms of DPPH radical inhibition were determined. The five mixtures contained polyphenols, flavonoids, and DPPH inhibitors with no variance. Bacteriological analysis confirmed no degradation, and 6-10% water content kept chips microbe-free. These chips may benefit the elderly as antioxidants.
